Cooked Lettuce

Take three or four nice cabbage lettuces, wash well, drain and tie them; have ready saucepan of boiling water, put lettuces in a boil exactly five minutes; then take them out and plunge into a basin of cold water (to make them retain their green colour). Have ready another stewpan, with either butter or dripping sufficient to cover the bottom of the pan about half an inch, having the butter frothy; pop lettuce in and stew for over an hour and a-half. This is a Parisian recipe and a very good one.
