This is a rather mysterious recipe. It's either an eggless soufflé with an original spelling or an original creation from Mrs Coutts of Te Kuiti.


Baked Fish Souflee 

1 teacup breadcrumbs
1 cup cold cooked fish
1 cup of cold beetmash sauce
some small lumps of butter
a squeeze of lemon

Put a layer of cold fish into a buttered pie dish, add a layer of sauce, then of breadcrumbs, till dish is full. Put lumps of butter on top with lemon. Season well with pepper and salt. Bake about 20 minutes.
